if you put it in a even larger pot they will grow larger and fatter trunk in a week or 2.... as long as they get sun and heat.
you could cut the top of a gallon milk or water container and poke holes and use as a pot

But before bringing inside for the winter it is better to cut them short cut many leaves and roots and maybe wash them in dishsoap water to avoid bringing pests in - if any

why should i prune the tops and bottom? if it isnt ready for bonsai yet?
and wash the roots in dish soap?

well if you have room - do not do it.... if they are too big they may not get enough light and air circulation in the winter... may depend. I assume it is easier for a pepper plant to stay healthy indoor if somehow small since there is not enough light and air to sustain a LARGE PLANT

okay, i understand they can get large, but i down know how large mine will be when its time to bring them in. how cold can they withstand? and how close to the lights should they be? i have four 40watt t8s side by side

i only have cactus soil and a peat based soil ( i think it may be only peat, its what i sowed the seeds in )would that work? or should i wait until i can get normal potting soil?

Here's an old gardener's trick for peppers.
Take a book of paper matches, tear off the heads and place in a 2" to 3" hole at the drip line of the plant.
The sulfur is very beneficial, both in growth and taste, i.e. "hotness"
