For the same reason that you will sometimes find the under sides of Phal. leaves a maroon color, you will also find the same color in the flower spikes. I have noticed that the more sun that my Phals. receive the more coloring in both the leaves and the spikes.
My only other thought was a maroon colored growth tip of a new root. Without a pic, its hard to tell.
Many Phals do exhibit the maroon coloration of the leaves (especially undersides). If i recall correctly, it can be due to the influence of one of the species used in many hybrids. I dont remember which one though.
