Might I suggest two possible solutions to your cat and light dilemma?
First, consider a terrarium. It can be as big or small as you like, elaborate or simple. Check out the terrarium forums for advice! I've been posting there to get some advice myself.
Second, and this might be just a little cheaper.

Get cat grass. My cat used to chew on my houseplants too

, until I started growing a pot of grass just for her. The little demon just wanted some salad

You should be able to get seed (cheepest) or grass that's already been grown (more convenient, considering your space and light issues) at any pet store.
