Trimming down the stem is a good thing to do. It is recommended to trim it down to just above the second node. Then there is a chance of new growth coming from about that node. If the stem has browned or turned color from the fresh green that they are, I would trim it down to the very bottom. It's spent.
When it reblooms is a crap shoot, of sorts. I find (and this is only my observation) that if the phal has bloomed for a long time with many blooms, it needs to rest a while and you may not see more blooms for up to a year. I cut the stem down to where the leaves are and let it rest. It could be close to a year before it pops another spike.
If it's not done blooming yet, you will see new growth starting at or around that 2nd node within a short period of time. Sometimes it seems as though they never want to stop blooming.
So having said all that, you did a fine job. Keep an eye on your leaves and make sure they are not dark dark (needs more light) and not light light (getting too much light) but a nice medium green. Make sure they aren't overwatered, but soak the roots good, then let dry out to almost dry....should be quite a few days. Fertilize with orchid food every other watering.
They truly aren't that hard, and they are so rewarding when they do bloom. You will be fine! There is someone here to help, always.
