Where do you live? Might be able to put the Amaryllis outside in the ground.

I'm just concerned about the not-quite-occasional below freezing nights we've been having this past winter. I'd hate to kill them after all this work.

Just bury the necks so they're below the freezing zone. They're hardy almost to zone 7 with mulch. You don't need to mulch. You will lose leaves in freezes but they'll grow back.
