It is still the species Den. speciosum, not a hybrid ... but without a "variety" name. Both of these are the same species, but with somewhat different habits. Var. curvicale is relatively smaller and low-growing, var. grandiflorum can get quite tall (and become a beast) . So the combination will give you a Den. speciosum that will stay a little bit under control.

So, if I pollenate grandiflorum with the pollen from curvicale, I get Dendroium speciosum Alan or Dendroium Alan?

Welcome to the Orchid Board!
You can call it whatever you want, but it won't come to you.

First of all, it is a dendrobium, with a "b".
Dendrobium speciosum x Dendrobium speciosum = Dendrobium speciosum.
If you find one of the offspring that you think is special, you may very well give it a cultivar epithet- Dendrobium speciosum 'Alan' - but being sexually reproduced, each one is an individual, so not all of them could have that cultivar name. Basically, they could each have their own, different ones.

You can name a cultivar (which applies to a particular plant, not the whole cross) anything you want (the part in single quotes)... unless it is awarded, the cultivar name is not registered any place. If you get a particularly good one, you might name that plant Den. speciosum 'Alan' and get it judged that way. But it would not be a variety or a hybrid. (The individuals... potentially dozens or hundreds of seedlings) would just be identified as cross between two varieties of the species. (Looks like Ray beat me to it, while I was writing)

Thanks Roberta and Ray for the answers.
I got it at the SBOE summer sale. I will call it Dendrobium speciosum 'Alan'
