Those bare canes actually do look very Dendrobium-like to me (there are a bunch of Dens that bloom on older, bare canes that have lost leaves) If it is, that looks like one happy plant.

When it finally blooms, please share the pictures as I am really curious. Whatever it is, though, it is a very healthy plant and I think you found a nice addition to your collection. Good luck with it, whatever it might be.

Perhaps it is some form of dendrobium.
The first photo shows that the mature canes grow 38 to 40 inches tall.
The second shows a single cane grown from a kaki. In one season it has grown to 26 inches.
The canes are fatter towards the base (1 inch) than at the top (1/3 inch). The leaves at the bottom are squatter - 2 inches wide by 4 inches long - and get more slender at the top - 1 inch wide and over 6 inches long.
The leaves on the cane staggered on opposite side of the cane (I don't know the correct term for that) much like my nobile types.
However, the way the leaves emerge from the top of the orchid is not like other dendrobium photos I've seen. The new leaves almost seem to spiral out of the head.
So I will try the approach that works for my other dendrobiums. I'll stop fertilizing come October, cut back on watering and let it have a period of cool to cold evenings. When I take them over to the greenhouse later in the fall, I'll keep it on the ground because that seems to give the plants down there cooler evening temperatures.
If I can get it to flower, I will load the photos.

Just took a look at my Den. bensoniae... very similar leaf growth pattern. Not nearly as tall, but it is a division with only one year's new growth and mounted at the beginning of this year so I expect it to get bigger. A little thicker canes relative to length so yours likely not the same, but likely related to that section at least.

Could it be a ginger?
I have no idea what ginger's growth phases are but the leaves look like it could be ginger of some sort.
Edit: just saw the second set of pix. One in particular does look like a Den.
