Yeah, phalaenopsis are monopodial, and dendrobiums are sympodial. They are very very different in that way! It is like asking if a cat and a rabbit could "pollinate" each other– it just won't work.
I am not extremely familiar with plant genetics, but you need to at least stay within the same genera in most cases- oncidiums with oncidiums, phalaenopsis with phalaenopsis, and dendrobium with dendrobium.
That is how I understand it, anyway.
