I think "pansy orchids" are Miltoniopsis.

You have a Miltoniopsis. One shortcut to tell the two flower types apart, Miltoniopsis have a 'cleft chin' like this one. Miltonia tends to have a pointed or rounded lip without the split.

Of course, you still commonly see Miltoniopsis called Miltonia, and hybrids between them exist as well.
