They can grow new crowns, surprisingly, if the point from where the new leaves isn't badly damaged. My phal japonica sent out a 'terminal spike' and after the blooms, I dug that out, it grew a new leaf and proceeded as normal. Sometimes, too, they grow a new plant off the side.
Deer can be very destructive. In the beginning, I kept my plants in the back yard but then I noticed the tops of all my plants disappearing. Definitely too high for a bunny so....
Deer even will graze on 'deer resistant plants'. You could try buying a used rabbit cage and keeping your orchids inside it, if you don't have too many.
