Can a plain NOID Phal have more than 2 bloom spikes?

Short answer: YES.
But it depends on the Phal!!
Assuming that culture is optimal, the genetics of the plant have a lot to do with it, and there's not a lot you can do about that. Some will never have more than 1 spike at a time, and on the other hand I have some that have 3, 4 or even 5 spikes at once.

My two best ones are a named one (Purple Gem) with 4 spikes, and a noid (trade name is Pink Panther) that had 5 spikes at once, which kept extending and blooming for 3 years straight. Started with 2 spikes, and each year another 1-2 new ones would join the fun. It finally stopped blooming last summer......and decided to grow 4 keikis instead. And now I see more buds! Crazy, crazy plant.

So it's not likely that a Phal with 2 spikes will ever have more than that?

If 2 is already unusual for it, I think 3 is too much to hope for. But if it very often has 2, and if you grow it well, 3 is entirely possible as some point.
