I grew bonsai for 40 years before getting into orchids. I used copper wire that I annealed over the stove to soften it. A small size wire (#20 would work), put down into the mix and then started to be twisted around the developing spike could help direct the spike anywhere you wanted it to go. As the spike elongates, you spiral the wire around it a twist at a time. Then after you get it on a few twists you can start bending the spike a little at a time. Couple times a day and within a short period you can get it to cascade whichever way you want. It's easy.
