I don't think you can do anything 'wrong' - if the spike is still green, it may branch or keiki, but it won't harm the plant if you cut the spike. Cutting down to a node MAY induce new buds or keikis. Cutting the spike won't harm the plant at all.
I don't have much experience with Phals tho -
