In both cases, there are ancestors that are fragrant. In the case of your Catt, it has Brassavola nodosa in its background, which is night-fragrant. In hybrids, a plant with fragrant ancestors might be fragrant... or not. (Individuals from the same seed pod can be very different) In the case of the Phal, it has Phal bellina and Phal violacea in its background, both of which are fragrant. But very possible for the hybrid to not be... again, there might be individual plants from the same pod that are fragrant, genetics are a lottery. Even a clone of a fragrant orchid might not be.
