Zxyqu has a really good idea. You can hang your lights, one or both, high from the ceiling and lower them or raise them as needed. You have some options to do this like rope and pulleys, chain and hooks, or ratchets. This is probably your best bet to make sure you get the light you need without getting to much.
* If you look under the vanda alliance there is a post I did "vanda completely bloomed under LED." It has pictures of my indoor greenhouse. Althought, something like this won't work for you I think it'll give you some ideas. I don't move my LEDs up and down put I do have a sysytem were I could.
