Btw, the phal has a small spike; is it gonna grow new roots at this point at all?

I would assume so, but probably a bit more slowly than it would in the warm growing season. Right now it is diverting large amounts of energy to growing the spike and flowers.

Just to clarify, what do you mean by small spike? I assumed you meant it its growing, but perhaps the plant is in flower?

It's growing a flower spike it's still small, not even an inch..
Maybe it's getting adjusted to the new environment because there's no sight of new roots growing at all; actually, some I can see 'breaking' at somwe points but still the actual root (the thread) is intact.
Im a bit scared,wondering at what point I should considering taking it off their mount! It just looks very nice mounted!

I really like how the blooms of phals often become pendulous when they are mounted!

You should use a material that holds moisture like sphagnum moss those wood string you put doesn't suitable for mounting unless you will water or spray twice a day. Which is extra unplayable work😔. Since you already put those wood string keep them on and push sphagnum moss between them. But keep it space for air! GOOD LUCK!
