In my wildest dreams, it wouldn't be a greenhouse, it would be a conservatory!
Separate "houses" for different growing conditions with companion plants and live trees to freely mount on. A waterfall in one with a taro pond and wasabi pond (that stuff is
expensive!). Something like the cloud conservatory in Singapore!
Also, vanilla farm with planifolia and tahitensis.
Maybe a separate rooms just for bulbos because of their... aroma.
In reality:
A good sized greenhouse or glasshouse on a bright hillside. Large enough to be partitioned into a cooler side and a warmer side. Artificial lighting to prolong day hours in the winter. Built in heater (biomass) and AC for the very hot days, ultrasonic humidifier, standard ventilation. Standard plumbing with hot/cold coming from a rain collecting cistern, passive solar heating?, RO rig if not. Frame anchored to a foundation just in case nature gets crazy. Windows/Panels of the house would be double pane to insulate. Drain in the center like they do in commercial kitchens.
