Your project is open to all kinds of variation, depending on what you really want.
From an energy perspective, the closer you can come to a spherical shape (as in geodesic dome), the more energy efficient it will be. Next to that, a cube beats a long, rectangular structure, or one with a low ceiling. Think in terms of minimizing the surface-to-volume ratio. Larger structures are more themally stable, too.
You might also consider internal partitions, so you can create zones of different conditions. Multiple greenhouses?
As far as this being a retail space, keep in mind that tags "walk away", plants get knocked over, etc. Many firms have a sales area, plus a growing areas which are inaccessible to the public. No matter what appraoch you take, make sure the aisles are wide enough for people to pass - plants in hand - without interfering with each other or the plants on the benches.
