Mine looks like your second one, the white one with dark maroon center.
Mine is called Chao Praya Gem or something like that.

Guess that just goes to show that one can not identify an orchid by the appearance of it's bloom or it's foliage. Here we have two plants that I can not see any difference in and we have 2 different names. That is assuming the name tags didn't get changed before we acquired them

True.
I have seen a few dendrobiums with this same look but they all had different names.
Here's another thing to consider.
Some of these names are actually just marketing stuff that some sellers use.
So some of these hybrids with different names are actually of the same variety.
still, there's no knowing for sure without the tag.

I have a Den Noid that looks exactly like yours. I have no idea what it is, I bought it at Lowe's when I first got the orchid bug. I think it was actually the second orchid I ever bought, and when it grew too big for my space, it came real close to a one way trip to the landfill. But I just love the flowers and it is easy to grow, so I have kept it.
I haven't gotten double spikes though, nice growing!
