On a keiki, it's best to wait until the roots are 2-3 inches in length before separating it from the mother plant.
In my opinion, it would be fine for you to take that next step with this one
One of my Dendrobiums has i think... 8 keikis growing at the moment... I've already pulled another 2 off. In fact if you look closely i think the whole plant is made from lots of keikis joined together!
Your excellent photos show nice heallthy roots, and a just starting to grow cane. I would wait for a while, then place in moist spagnum, and spray with a weak seaweed extract solution, which increases the brix. Then after it's somewhat established, either mount or pot.
I have not had keikis fall off, but I have had the cane their growing on fall off, as the cane withered and the weather affected it.
When you do cut your keiki off, brush all cut surfaces with cinnamon(it has anti-bacterial properties). Plant the new plant in sphagnum moss as suggested and you will have a wonderful new little plant. It was suggested to me that you wait until the roots are 2 inches long before you detach the plant.
