No, it is not. BUT it is VERY dry.
The wrinkly canes and the potting mix indicate this plant has not been getting enough water.

These plants need daily watering in the heat of summer while they are in active growth.
You want to grow them as big as possible and then start to cut down on watering as cooler season arrives.
You want to soak this plant for good ten minutes or so. then drain well. You want to make sure this plant does not go bone dry like this again.
It is just bad for the plant and the flowering will not be good if ever.

I keep mine all fat (the canes) at all times when possible. Even during the winter rest, these plants need to be well watered unless the temperature goes down below in the 40s.
Also, many of the hybrid nobiles will not lose leaves unless they experience cold temperature.

Anyhow, I can't really tell in your picture if your cane is done growing, but take a look at the top of the cane. If you still see leaves coming out on top, it is still growing, so do not expose the plant to cooler temp and continue to water it good.
If you see there is a small knob looking thing on top, it will not make any more leaves, but still water it good. Your plant is seriously dry, which is not good.

I see that your phal (is it phal?) behind your dendrobium also looks bone dry?
The moss looks completely dry out and the leaves are crying for some water. lol

Overnight soaking can be ok as long as you don't water it that way every day. lol
It is not necessary and can invite other issues.
Orchid roots need air, and while being completely immersed in water for many hours won't necessarily kill the roots (depending on the type of orchids), it is not recommended.

I think leaving the pot in the bucket (or sink) full of water for 10 minutes (or go for half an hour if you'd like) and then COMPLETE draining should be good.
If you have been growing this plant very dry for a long time, most of the wrinkles will not go away. but the newer part of the canes will fatten up in just a few days.
You have quite open mix in a very open plastic pot there. You might have to water everyday as drainage is not a problem there. but you will have to soak every time you water for the best results. Otherwise water will just run through the bark mix and roots do not get enough of what they need, unless you can water a few times a day.
So daily soaking is a great practice while it is growing.
Once done growing, you can water less but still keep them well hydrated for best results.

Do you have a misting system in your greenhouse?
If not, no matter how heavily you mist, things will dry out real fast in the summer.

With the mix and pot you use, you want to water dendrobium nobiles daily (and good watering too).
They grow big fast during warm summer because the wild ones grow during the summer monsoon season. They get rained on HEAVILY.
So in cultivation, if they do not get copious water during growth season, the result isn't very good.
