My Den. Iki has a new growth. I tought this was a time of rest for them, but apparently this plant has other plans. What do I do? Do I start giving it plenty of water, or just leave it be? HELP!
New growth or not, this one calls for a winter rest so start reducing water and food the first week of November. You can give it a light misting once every 3 weeks or so until the end of February/beginning of March...which is when you should see a number of new growths popping up
Mistking

While most do, not all Dendrobium need a winter rest, it depends on the species. With over 1000 species, the requirements run from bone dry and cold, to lots of water and hot. I have some outside that are still growing and sending out spikes, these I continue to water. For others, I have begun to reduce watering. If yours has new growth, I would continue to provide moisture.
