My Den Phok bong x Den little princess is reblooming, but i noticed that there are less flowers, and the stem is smaller too. Should i do anything?

That is usually indicative that the plant is not getting the level of care that it once did, often in the nutrient department.

It looks like it was left in the cold and lost leaves, which set it back.

Hmmm, i fertilise the plant weekly with a weak fertiliser gaviota 63 21/21/21 and once in a while the flowering fertiliser. This dendrobium hybrid has very thin long roots, unlike most other dendrobium i have. I would have change the mount, if i can yank it out, and mount it on a fern bark instead. Seem like a delicate hybrid.
And the plant is grown in the balcony with morning sun in the tropics, but still have a habit of losing all it's leaves after a few flowering spikes. Is that in it's ancestry or is it a problem?

Its a hybrid so it must have improved genes....it is supposed to improve on every blooming cycle....you must have more blooms; bigger brighter colored ones....more keikis to form more spikes with bigger roots that in a couple of years you must have a specimen that gives you a magnificent display of flowers....
Ray is right....you must review your Dendrobium culture get a refresher's course and start from scratch....undo what you have been doing because it is not working
