Does anyone know what species are mixed to create the Dendrobium salaya?

There is a Dendrobium Salaya Brown registered, but not just a Salaya.

Salaya Brown = Den. Bobby Mesina x Den. Da.
Both those parents are hybrids whose own parents are hybrids, so it looks like it could be quite a complex one with lots of species in.

I don't have time just now to trace it all back, but I use this site to trace them back when I want to. On the 'Grex Name Search' you enter the genus and the name and it finds the parents. You then repeat until you get back to species (lower-case first letter for species).

Glad you like it. I use it a LOT. I just wish there was a link that once you've found parents you could just click on them to see their parents, instead of going back to the beginning and typing them in.

The other good one to know is World Checklist of Selected Plant Families: Royal Botanic Gardens, Kew

This one can confirm species names and the current accepted name for a species.

With the exception of Den. Salaya Brown, it seems like most of the names (Salaya Gold, Salaya Stripe, etc) are not registered names. Salaya is a city in India & it appears that someone is just using trade names (not registered names) for sales purposes.

Sometimes companies do that for commercial purposes, with a nicer sounding or easier to pronounce name than the registered name. It leads to a lot of confusion when people accustomed with registered names encounter these trade names. Many times, the hybrids were not even made by the people who make up the new trade names. I don't know if that is the case here.

In the US, the big box stores simply don't put on a name. Then buyers put up a photo & ask for a name & plants ultimately receive the wrong name anyway.
