Den Phal hybrids can range a lot depending on the other parents involved.
NoID Den Phal types have part parantage of the species Dendrobium phalaenopsis, but the other parents/grandparents/greatgrandparents could be anything, generally they are classed as Den Phal type if the flowers have the appearance of the Den phal species.
So then, the traits of the other parents can play a big roll in the appearance of the plant as a whole.
I have one with very thick canes and thick leaves. The canes are thick top to bottom.
Another of them has thin leaves, and canes which are thin at the top and bottom but really really fat in the middle (fatter than the one above). The leaves and appearance of the cane are completely different to the first one.
Then I have a third which has thin canes all the way up and thin leaves. This is closest to the second one in appearance of the canes, but it always grows them thinner than the second.
I think that it is likely you just have some which grow smaller/thiner because of the parents it has.
