Default Den. Nobile type...how long out in the cold

Being my first winter with a Dendrobium of the Nobile type I was wondering how long one should expose to cold this winter in the mid-Atlantic region. I have no idea how cold it will be. I will be putting it in a window with that is slightly opened to the weather. Plan this for 24 hours a day so it will be getting east exposure sun during those days that we have sun (seems to be far too few for me.)
I cut off water 3 weeks ago. When do I start re-watering? What are the signs of too much dehydration? Being negative...what are the signs I killed this poor plant.
I really like this plant although it wasn't too expensive. I would like to do right by it and have it survive and bloom next season.

I have Dendrobium anosmum, a decididuous type and I don't subject it to cold temps. Only dry. I withhold all water and fertilizer starting Halloween and start up again when I see signs of new growth and flower buds in spring (usually around April). Hope this helps.

Hey there!
I checked out my babies tonight, and my Nobile Dens have buds coming out of Old canes!! I couldn't believe it!! This cold has pushed out miracles!! Cause I've had that baby for about 2 yrs now, and nothing till now!!

She is outside in my hotel, and sadly, gets watered quite often from me. 3 times a week at least, and weak fert every couple of weeks too. I figured I was doing wrong, but I never remember to remove them from there.

But I lucked out!! I have about 6-9 buds, pretty big ones coming out of an oldie! I checked the newbie canes, and nothing on them?

Anyways, my chids surely stay about 50-60 nightly. When it's cold in the 40's-low 50's, I cover the hotel up, and throw 3 heaters in. One in each.
