For my cane dendrobiums, I grow in a 50-50 mix of charcoal and lava rock in clay pots. I water them about once a week in the winter and about every 3 or 4 days in the summer. I also cut back on fertilizing them in the winter to once every 2 weeks from once a week in the summer. I use Dyna-Gro Liquid 7-9-5 along with Super Thrive. About every 6 weeks or so I use Epsom Salts and potassium nitrate (at a rate of 1 tablespoon per gallon of water) along with bloom booster and Super Thrive. They get between 50 and 70% sunlight, depending on where in my growing area they are located. This plant gets 70% in the afternoons, shade in the mornings.
I think that one of the keys for growing them successfully is that I don't disturb their roots when stepping them up inyo a new/larger pot unless I absolutely have to. Growing them in medium that does not decompose allows me to simply break the clay pot they are in (so it is full of cracks), and just secure it in a new pot. This way, other than the first time I transplant them, they don't go through the normal transplant shock most plants do by removing old broken down medium from their roots.
Also, unless absolutely necessary, I only transplant dendrobiums in the spring (April to May in my area).
