FYI, Dendrobiums like a lot of other Orchids ENJOY being root bound...from your picture, this particular Dendrobium isn't there yet.
Most Orchids can thrive in their media for about 2 years before it has to be changed. There are a lot of factors involved to change sooner or later...but average is 2 years.
When the roots are growing or the psuedobulbs are outside of the pot in a large mass, then it is time to change pots, and then only to s slightly larger pot.

As to the watering, depending on the hybrid parents, you water frequently...meaning that when the media is almost dry. You then water again, otherwise wait to water.
I usually water ever 2 days, with breaks in between to of up to 2 more days of dry media (makes sure the media is dry and root rot avoided...just my method though!).
My best suggestion is to read up on the Dendrobium family and apply the specifics to your methods.
