Is there a reference list for Dendrobiums that do/don't go into dormancy/winter rest?

I have a D. aberrans and D. jenkinsii, and I'm going to be getting a variegated miniature D. moniliforme. I haven't been able to find a lot of information on which of these goes dormant/wants a Winter break (which I think are the same thing? I'm a bit new to Dendrobiums, so the whole Winter thing and what qualifies as a "dormancy" or "rest" or "break" is a bit confusing), as opposed to the ones that just want a cutback/reduction on water/food during the Winter.
