Default Dendrobium Love Memory Fit - 2 Questions

Hey all,

I purchased my first orchid at the NY Botanical Gardens Orchid show a couple of months back, the Dendrobium Memory Fit. I bought it when it was all budded, with no flowers. It has now opened, the flowers are gorgeous, but are beginning to die off.

I'll be transplanting it soon, its outgrown its current container, roots everywhere. A new cane is already visible, along with another possible (I just see tiny leaves).

When is best to transplant it? Wait until winter? Or just till the flowers fall off? Or just do it now?

Additionally, is there a way to separate it so that I'll have 2 plants? I also have a walking orchid (volunteered at a workshop at the show and they gave it to me) - forgot the name. I learned how to separate that into two, but don't know if that's possible with the Dendrobium.
