I accidentally broke the top of the new growing cane of my dendrobium pak lai, I’m heart broken. What should I do with the broken part? Can the new cane continue to grow? Will the broken part grow roots or just die off?

that's unfortunate, happened to me repotting a phalenopsis this year, now that hurt. On a soft leaf dendrobium this is nothing serious.
A dendrobium cane is divided into sections. New canes emerge from the base, this one has lost it's tip which will not affect it too much. No vital functions will be affected on the plant and the cane might even be able to flower still.
The tip is too small to be able to form new roots so nothing can be done with that.
Don't worry; we've all done that. It won't affect the plant long-term. The piece broken off is too immature to make roots and grow on, so you can throw it away. The broken piece below it will heal the cut but is unlikely to grow any taller. It might even flower in years to come. It will probably make another growth from the base fairly soon.
