what to choose

I have a grower here in my home town which supplies a lot of good quality paphs.

I am going to take the following: paph. esquirolei

But i cant choose one from the following: paph. armeniacum x emmersonii
paph. henrayanum

What would you say are one of the best to choose

Why not both?

It's really mostly down to your own personal taste really. Henryanum is a beautiful small grower with lovely flowers. My personal taste is more towards the Franz Glanz, though. I also feel like that will give you a little more variety in terms of leaves, growing habit, and flowers.

I would go for the armeniacum x emersonii. It is very different from the esquirilli. It has mottled leaves and a different flower shape. I'm starting a paph collection too, and have chosen two very different paphs, a Rothchild like paph, and a white bulldog type.
