If it is a seed pod, how could she do this without my intervention? And what the heck do I do with it?

I don't think so, just the dry stem of a flower that dropped. It likely will come off easily with a light twist, or just fall off eventually. Seed capsules are fat and tend to have bits of the flower still visible on the end.

As far as pollination happening without intervention, sometimes orchids do self-pollinate (though Paphs not so much)
