Also - depending on the media being used - waterlogged media could create issues.
I grow Phrag Grouville and Phrag Elizabeth Castle in scoria. And I grow various Paphs - all in scoria too. 100% scoria. They are all growing excellently. I think they can all handle drying out of their roots. But maybe don't leave them dry for too long, as these orchids don't have pseudobulbs obviously.

I water my phrags every morning. I use 5 mm average diameter scoria pieces in very good drainage opaque plastic pot. I just water the media only. The water drains right though. The scoria dries at some rate, and the media inside the pot - such as in the middle and bottom of the pot - may still be moist on the following morning. In any case, I haven't seen any issues when the media in the whole pot becomes dry. But as mentioned already - just don't allow the roots to become bone dry for relatively long periods of time (eg. 2 days, especially in really low humidity areas) and everything should be ok.
