Now my problem is the temp - its gone to upper 20's in the last day or so. Forecast for the next week is a low of about 32f on the odd day. I have provided protection for the pot/roots and it is in a sheltered spot on my deck. Unfortunately its too big to indoors at night.
Any advice ? If I bring it indoors too early will these spikes still fully develop ? Its one of those darned if I do and dinged if I do type of situations....

Although my experience is with miniatures, I think once the spikes have started, you're ok to bring the Cym inside without lose of flowers. It can't freeze.

I hope you brought your plants in. Freezing temps will damage your spikes.

I am still OK. I have an amaryllis near the cym that is still OK and pet water in a dish a bit further away than that hasn't frozen. I am watching the hourly forecast closely. Seems like I am going to be OK for at least 10 days based on the long range forecast too.
... And there is a 4th nubbin developing

update.
There is new growth ( first photo - between the pbulbs ) and spikes developing.
Unfortunately the foliage WAS hit by frost. Thing is I am not sure if the one spike was. Its gone very yellowy. See photo. Is it a goner ?

update - so I lost 2 spikes and still have a third. See photo - seems small to have such well developed buds ? Is this normal - looking ? Blooms are yellow - does that mean the buds will be yellowish at this stage ?
I have 6 new growths.
