Wonderful looking flowers
I don't know about the colours. I don't grow Cym's (yet) but it looks wonderful.

The difference in color might be natural, if they bloomed out that way.
On my white cym that recently bloomed, the lip became all red a week before the bloom fell off. It's part of the senescence process, where the extra ethylene accumulation in the bloom triggers the color change. So if your blooms are somewhat old, and they changed color recently, and appear to have a slighly different texture, it might be old age.
Here is a pic of one I saw 2 years ago when I went to visit a Cym cut flower grower. I know that I asked the grower why they were different colors, and I know that he answered, but I really can't remember at all what he said!

That i would like to know my self...
In Norway, theres just random if the chids are tagged, and often, if theres tags at all, the name is wrong...
I have seen Dendrobiums tagged as Cymb. and even a Phaph, tagged as Oncidium....
I remember buying a Wanda, and the grower told me to water it once a week during summer, and once every second week during winter.... Need i say their Wandas seemed a bit dryed out...?

Have observed this happoning after the pollen cap is pulled of the flower also happons if you put pollen on the flower - its a signal to the plants polinator that its buisness with the flowers has already been done.

I agree with Camille. The blooms tend to get that red flush before the flower dies.

I had just bought this one when i took the pics, so i really dont know how old the flowers are...
But the texture seems the same, and the different colored blooms is located all over the spike.
You might be right thoug, the blooms dried out shortly after i brought it home, about one week or so.
But all the flowers drued out, not just the red ones, so it migth be due to the change as well.
I guess i have to wait till next blooming, to know for sure!

I'll chime in my $0.02 worth...
This typically happens on cyms when the flower thinks it's been pollinated.
If it is "preggo" and you leave the spike on, you'll see a seed pod form after a few months.
