Monday was my son's birthday (33 - how old do
I feel!?!?), and he requested an old family favorite:
Ingredients:
- One large onion, diced.
- Four garlic cloves, diced finely.
- 3/4 pound ham, diced into 1/4" chunks.
- 3/4 pound smoked chorizo, similarly diced.
- 100 little neck clams, in shell.
Saute' onions and garlic over low heat until onions are clear, add meats and continue until they are hot. Put clams on top, cover, and wait for them all to open - I stir them periodically to ensure uniform heating.
Scoop into bowls and serve with crusty bread to sop up the juices.
Probably ought to serve four, but three of us took care of it with no issue, although we did have to wait about an hour for room for birthday cake.
I get ham from the deli at the grocery store, asking them to cut 1/4" slabs, so some of the dicing is done for me!
