I've been wanting to try this...out of curiosity, does anyone know why red wine seems to be preferred over white for cooking the pasta?

I use wine a lot for cooking, so easy and tasty. But I would probably reach for white wine first for pasta, especially if I wasn't going to be using tomatoes to finish it.
