Hi M,
The recipe came from an "Eagle Brand sweetened condensed milk" booklet I sent for years ago.
Mai Tai Pie
1 Coconut Crust (preheat oven to 350 degrees. In a nine inch pie plate, mix together 1/3 cup melted margarine and 1 7oz. package flaked coconut. Press firmly on bottom and up sides of plate. Bake 15 minutes or until edge is golden. Cool thoroughly.)
Filling ingredients:
1 -8oz. package cream cheese, softened.
1 -14 oz. can Eagle Brand Sweetened Condensed Milk.
1 -6oz. can frozen unsweetened orange juice concentrate, thawed.
1/4 cup light rum.
2 tbsp. orange-flavored liqueur.
1 cup (1/2 pt) whipping cream, whipped.
In large mixer bowl, beat cheese until fluffy. Beat in condensed milk and juice concentrate until smooth. Add rum and liqueur. Fold in whipped cream; turn into crust.
Freeze or chill until firm (approx. 4 hours.) Refrigerate leftovers. You can garnish with orange slices if desired, but I didn't.
Good luck Oh, and don't be tempted to add more rum...it's wicked strong as is, trust me! If anything, go less or assign a designated driver. kiki-do

Default Well, my wife and I are now

butt deep in pots and pans, getting a few things ready for our dinner tonight. We will have five altogether, but considering how some of them eat, we have to have a mountain of food here to eat. I don't mind doing my part as I can do a little each day to get ready. Yesterday I made the paste for the roast and put it on last night. I readied the grill today and made a sauce similar to what they have for prime rib with horseradish and sour cream. We go to my brother-in-law's tomorrow morning for breakfast and to my sister's tomorrow afternoon, after a brother gets here from Wisconsin. She is all ready stressing over everything. I have told her not to freak out over everything, but I guess there are people who absolutely do, no matter what. I always considered myself as being nervous/stressed, but I am totally relaxed all the time in comparison to her. You can only do something that is within your control and not sweat the rest is what I told her, but there is all ready three or four things that she is having a rough time dealing with, and I can't understand why.

Hummm, that is awful that she is so stressed. When that starts happening to me, I stop what I'm doing and breathe in and out slowly, then think of where my importance is in all the grand theme of things. What will happen if my house isn't perfect, or food, etc. Nothing earth shattering, trust me....maybe a good laugh for holidays to come. Tell her to breathe....to laugh.... and to put this into it's proper place.....time to enjoy with family. Speaking of laughs, I just baked Thumbprint cookies...took the first batch out and I had forgotten to make the thumbprint and put in the jelly. Oh well, these are now known as the "non-thumbprint" cookies.
