My husband LOVES baked eggs - and if I have duck eggs available they are extra special....
So, at home we have 14" of snow and a 300' driveway. This gets very old VERY fast, and for a break we headed to the coast for milder weather. WRONG.
The news says there is a monster storm hitting the Pacific Northwest and we got snow at sea level!
But, we are on a mini 3 day vacation and baked duck eggs were called for. We usually have these only on the weekends and only here at the coast, so I keep a pot of thyme and rosemary growing year round (in a normally mild climate!) My sweet RB allowed me to post this picture showing his dedication to delicious baked eggs. He's cutting some fresh thyme for me.
The receipe:
Rub a tsp. of unsalted butter in the bottom of a small 4" cast iron skillet. Pour in 3 Tblsp. of heavy cream. Place the skillet in a 350 degree oven.
Have ready - 2 eggs cracked into a small bowl, 1 tsp. minced fresh thyme, 1 tsp. minced fresh rosemary, 1 tsp. minced fresh parsley, and 1/2 tsp. garlic salt.
After a few minutes, when the cream is just starting to bubble, add the eggs to the skillet and top with the seasoning. Cook for 5 minutes.
When you remove from the oven, place the skillet on a hot pad and be careful not to burn your tongue!
