Guacamole
Anyone else like the stuff? I love it. Wife makes it every once in a while. Layers it with sour cream. Can do a variety of things on top-tomatoes and lettuce, salsa, etc. Yumm!

Love the sour cream and guaca combo. Don't know how to make either one. Don't know how to make salsa or how to grow tomatoes or lettuce. Boy, come to think of it, If I ever end up being the last man on earth, I will quickly starve!!!

Guacamole
this is a very simple recipe.
1-2 ripe avacados
1/4 jar hot peppers or chilies (depending on how hot you like it) Blend these in blender.
Add:
lemon juice
1/4 of an onion, chopped
salt and pepper to taste
Layer in pan
Top with layer of sour cream, layer of shredded cheese, then a layer of tomatoes and black olives, or salsa and black olives

Very simple recipe, I can't understand why people buy that stuff already made in a container...blechhh!
My recipe doesn't differ much from yours, Gregg. I use red onion and fresh seeded jalapenos minced fine rather than jarred, and I just mash it with a fork instead of using a blender. Leaves it a little chunkier.
Now, I have to put together a Mexican meal cause my mouth is watering!

I think the recipe
is one of those that is "open to interpretation" as I like to think of it. If I can find good, fresh jalapenos, I use them. Unfortunarely, those aren't always easy to find here. Much of it depends on how I feel and what is available. I request that she make it every once in a while. She does not always have the time. Sometimes, I make it, too, but there has to be someone to help me eat it because she doesn't eat it.

if you want a special touch, use lime instead of lemon, and use the sauce of "chipotles en adobo" for the hot kick!!! and fine it with very thin sliced Cilantro leaves... just great!!!!!

yeap! juice to avoid the paste from oxidizing... another thing to avoid this are:
1.- Put the seed of the avocado in the guacamole until ready to serve (don't ask me how or why this work, but it is the way my Grandma, my mom, my sisters and almost everybody in my family does it)
2.- cover the whole guacamole with plastic foil (touching the guacamole and leaving not even a single air bubble in it)
