if you want a special touch, use lime instead of lemon, and use the sauce of "chipotles en adobo" for the hot kick!!! and fine it with very thin sliced Cilantro leaves... just great!!!!!
Love the Cilantro and lime juice. I've been doing it this way since I had it in Mexico. For a fresh and spicy kick I use a kitchen rasp to grate in a fresh jalapeno and lime rind.
I also add the lime juice to the chopped onion and garlic a couple hours before I even cut into the avocados. The acid pickles/cooks them a bit and really cuts down on the garlic/onion breath afterwards.
I love guacamole! Years ago when I was pregnant, I would crave it. This was before I new how to make it. We lived near a Mexican food restaurant and I would buy it by the pint and just eat it with a spoon. Who needs chips?
It's great, and I love spreading on a sandwich instead of mayo or butter. Tastier and far healthier. Also great in a pita with some chopped up fresh veggies and some grilled chicken.
