Does Anyone Have a Blackcurrant Juice Recipe?
We have a couple of blackcurrant bushes and the berries are almost ripe; my question is whether anyone makes blackcurrant juice. The berries have an odd taste (don't have a better way of describing it) that seems to diminish when cooked.
When we were in the Netherlands this spring, we had a wonderful blackcurrant juice that didn't have a strong flavor but wasn't sweet either and it didn't have a cooked taste. I looked on the internet but all the recipes cook the berries, almost all of them have tons of sugar, and quite a few have what seems like a lot of vinegar. I was wondering if anyone had a good recipe they wouldn't mind sharing--or even a way of reducing the odd flavor.
