Default What to do with Beets...

Hi, our beetroot has gone a bit crazy this year, so I thought I'd share a GH recipe for a chutney which has so many uses (and is also fantastic as a burger relish ). However, I'd love to hear of any other ideas/ recipes you have

(PS sorry the below is in lb/oz, I don't usually work in kg/g)

1 1/2 lb raw beetroot, peeled and chopped
1lb cooking apples, peeled cored and chopped
8oz onions, skinned and chopped
6oz seedless raisins
1 1/4 pints malt vinegar
1lb 2oz granulated sugar
1tbsp ground ginger
juice of 1 lemon

1) Place all the ingredients in a heavy duty pan and heat gently, stirring occaisionally, for about and hour (until the sugar has dissolved). Bring to the boil and simmer uncovered for about 2 1/2 hours stirring occaisionally) - the mixture should get thick

2) Spoon into jars, cover and seal

Cook three beetroots, peel and slice. add two chillies, juice of one orange and flesh of one orange, one big onion cut in rings, cook still there is hardly any liquid left, add fresh toasted pine kernels, coriander leaves.... ready.

I am old school. I just had a mess of buttered beets last night!!!! The chutney sounds good though.

Oooh, sounds nice.

I like beetroot roasted with olive oil, balsamic vinegar, finely chopped rosemary and black pepper sprinkled over before cooking.

It has become my favourite vegetable done that way.

Beet Salad
4 large pickled beets, diced chunky
2 boiled eggs, chopped
1/2 stalk celery, chopped
1/4 cup sweet relish
1/4 cup of onions
1/2 cup mayonnaise
1/2 tsp of tarragon
salt and pepper to taste

really quick pickled beets:
3/4 cup sugar
3/4 cup water
1 cup white vinegar
2 tablespoon mixed pickling spice
3 to 4 cups cooked beets, peeled and sliced
Boil together sugar, water, vinegar and pickling spice. Cook for a couple of minutes. Pour over cooked, sliced beets. Bring to room temperature, then cover and refrigerate overnight.

A great recipe my family has always made since visiting Poland is Creamed Beet Barszcz or Beet Soup. It is traditionally served during the holidays in Poland but I like to make it year round as it is an excellent soup that fortifies the body year round and is perfect to warm you during the winter months. Here is the recipe we use:

Makes 4 servings
Prep Time: 30 minutes
Cook Time: 30 minutes
Total Time: 60 minutes

Ingredients:

4 beets, washed, or 2 cups sliced canned or jarred beets
4 cups meat or vegetable stock
1 teaspoon sugar
Salt and black pepper
1/2 cup sour cream
2 tablespoons all-purpose flour
Chopped fresh dill for garnish

Preparation:

Heat oven to 400 degrees. Wrap beets in aluminum foil and roast until tender, about 30-45 minutes. When cool enough to handle, peel and slice.

In a medium pot, bring stock to boil, add beets, sugar, and salt and pepper to taste. Simmer 10 minutes. Transfer to a blender or food processor and puree until smooth, and return to pot.

Mix sour cream with flour until well blended. Temper sour cream mixture with a ladle of hot soup, whisking constantly. Transfer tempered sour cream to remaining soup and whisk until smooth. Simmer to cook out the raw flour taste and until the soup is thickened, but do not boil vigorously.

Serve immediately or cool quickly in an ice-water bath and refrigerate to serve cold. Garnish with dill, julienned beets and sour cream, if desired.

If you have not had beet soup you should give it a try. It really is an excellent soup I think you would enjoy.

I really dont know ... what is a beet? I googled it and it gave me this picture. Its a red carrot? Why do you eat it? It looks nasty!
Oh well I never liked any veggies at all..I am a carnivore; so I cant be near a vegetarian...they will faint from my smell ... LOL

Lol, I always disliked beets when I was younger, but they make an awesome homemade soup and are very good for your entire body and immune system. So that is a reason to make yourself eat it from time to time

There is a therapy done with beetroot called Red Beet Therapy, consisting of consumption of approximately two pounds of raw, mashed beets daily, which has been favorably reported for cases of leukemia and tumors (includes cancer). Research also shows that beet juice can help inhibit the development of colon and stomach cancer. Beet juice is also one of the best purifiers of the blood and a blood builder that helps in the creation of red blood cells.

A Russian longevity researcher, Mikhail Tombak did a study that showed that beet juice improves the blood structure and cures diseases of the circulatory system, large intestine, and digestive system. He also showed that beet juice dissolves stones in the liver, kidneys and bladder.

So with that in mind beetroot is pretty cool for healing, even if you are normally a meateater only

The best use for beets is to add to the compost pile, or throw them at squirrels and rabbits that won't leave the plants that are actually edible alone. You can save a few leaves to add to a salad if you insist on eating some part of this noxious plant.
