Hi, our beetroot has gone a bit crazy this year, so I thought I'd share a GH recipe for a chutney which has so many uses (and is also fantastic as a burger relish

). However, I'd love to hear of any other ideas/ recipes you have
(PS sorry the below is in lb/oz, I don't usually work in kg/g)
1 1/2 lb raw beetroot, peeled and chopped
1lb cooking apples, peeled cored and chopped
8oz onions, skinned and chopped
6oz seedless raisins
1 1/4 pints malt vinegar
1lb 2oz granulated sugar
1tbsp ground ginger
juice of 1 lemon
1) Place all the ingredients in a heavy duty pan and heat gently, stirring occaisionally, for about and hour (until the sugar has dissolved). Bring to the boil and simmer uncovered for about 2 1/2 hours stirring occaisionally) - the mixture should get thick
2) Spoon into jars, cover and seal
