Oh my, and here was me thinking everyone loved beetroot! I used to have a cake recipe for them (for a sweeter version of carrot cake really) but I haven't been able to find it this year (it's one of those ones that friends pass around scribbled on odd bits of paper!)

No don't worry you're not alone! I like beetroot salad too. Beetroot soup.. I can handle about once /twice a year! well if you ever do find your cake recepie do post I love carrot cake and would definitely have a go at a beetroot cake!

OK...OK...I was ignorant about this root crop so I decided to give it a try...I was able to find a potato salad with beets(colored dark pink) it was filling but its not something I will look for in the near future...theres also a vinegar with salt&pepper raw beets sliced like coins: it was crunchy and the taste is like nibbling on the root of a reed grass.
I will eat beets if I was really really very very hungry and theres no food for miles radius

Chocolate Beet Cake
this I think is YUMMY! and I wont kick it out from my bed LOL
for the cake
85g dark chocolate
3 medium eggs
300g sugar
240ml sunflower or vegetable oil
300g cooked beets (see post above for how to cook the beets)
1 teaspoon vanilla extract
30g cocoa powder
200g flour
1 1/2 teaspoon baking soda
1/4 teaspoon salt
for the chocolate ganache
250g dark chocolate, broken into pieces
250ml heavy cream
Pre heat oven to 350 f.
Melt the chocolate (for the cake) over a double boiler. In a separate bowl, whisk together the eggs, sugar and oil. Slowly add the cooked beet puree , the melted chocolate and vanilla into the egg mixture. Beat just untill combined.
Sift the cocoa, flour, baking soda and salt. Add this to the beet batter. Fold just untill everything is combined. Dont over work or over mix the batter.
Spread a teaspoon of butter or oil over the surface of a 10 inch cake pan. Sprinkle some flour all over, and tap out the excess. Pour the cake batter into the prepared cake tin. Bake for about 30 minutes, or till a tooth pick or skewer inserted in the middle of the cake comes out clean. Baking time may vary depending on the pan and oven you are using.
While the cake is baking, work on the ganache frosting. Place the chocolate in a bowl. Heat the cream in a sauce pan, just till it starts to barely boil. Pour the hot cream over the chocolate and whisk till it forms a smooth sauce.
When the cake is done, cool it on a wire rack. Then pour the chocolate ganache over while the ganache is still warm. Let the ganache topping cool and set a little before serving.

I love beets but don't really do much except roast them, dice them and toss them with some kind of dressing made with oil & citrus juice. When I eat out, I like the roasted beet salad with goat cheese, walnuts & rasberry or balsamic vinegrette. Beet greens are great and I cook them the same way I cook swiss chards.

I didn't like them for years, until I discovered them roast with olive oil, balsamic vinegar, ground black pepper and finely chopped rosemary sprinkled over before cooking.
They are now my absolute favourite vegetable.
They are meant to be very good for you as well I hear. Something in red veg is good for you.

Unfortunately, no. You know how carrot cake is sort of brown with orange flecks, this is sort of brown with reddy-purple flecks. It still looks good though
