the Penko breaded chicken with ham and swiss turned out great. I didn't do the egg wash, I went with just a beaten egg...I mean, flower, egg, panko, onto the pan until golden, then into convection oven on the rack. Very nice, juicy and crunchy

next will be the corn bread

Dave I did this again for mothers day. Had my mom and the in-laws, few other people over. It turned out great ! I got compliments all over. They couldn't believe the crunch. Long live Panko...

I also did 75% wild rice with some other cool rices, reds browns, mostly for colour. Did it in a good stock from the day before, with European wild mushrooms (the king bolete, aka porcini -Boletus edulis - my favourite!). Turned out great. Wouldn't be complete without baby green salad with raspberry vinaigrette and toasted pecans and grape halves - from fresh raspberries minus the seeds of course

Outstanding - I had a PB & J sand. on grain bread. Not very inspiring to say the least.

If Panko is King........Clarified butter is Queen!

You know Costco has a really good rice blend - not sure if is in outlets in your part of the country. It has a good mix of red, wild, ebony etc - very sexy!

Clarified butter is great in'ghee'd

Costco bland is what I used, except I did 3/4 wild and 1/4 of costco mixed.

Default Parmesan Chicken

The other thing that could be done is parmesan chicken. All you need is egg and a combinatiion of either panko and parmesan or cracker crumbs and parmesan. after pounding out the breasts thin, dip into egg and then into mixture and put into a 350 degree oven for about 45 minutes.
