Hi Everyone I adore cooking and I can't believe that I've only just found this forum! I love making bread by hand (used to have a bread maker, but last 6/7yrs, it's all been by hand). I tend to specialise in Italian type breads, so I can post anything like that.
I could also propose some English favs like bread an butter pudding, perfect for the winter...?
I have also been told that I make the best Christmas fruit cake and chocolate brownies in the world, so I might be willing to part with their recipes ....
The only thing is that, being in England, I'll have lbs~oz/kg~g weights and not cups.
If any of those capture the imagination, let me know and I'll post the details

We have a couple members that are happy to convert recipes for us! Glad to have another participant!
It's kind of gone from a "one recipe project at a time" thing to more of a "everybody post recipes and then share how things came out and what you tried" thing.
I might be interested in that excellent Christmas Fruit Cake of yours......
I myself have a made-from-scratch super potent Eggnog recipe that is a tradition that my mom and I carry on, but never share..... It's super top secret.

It's in my hand-written book which has my own recipes and old ones which were my mum's favourites and creations. She was diagnosed with Alzheimer's 3 years ago and can't cook or anything now so I figure, I might as well let the world enjoy her recipes now-a-days.
It does come with a warning though ~ it does call for a lot of sherry or brandy (depending on your taste), so it's not good for non-drinkers

Hello Everyone,
Here's my fruit cake contribution:
'Mum's Merry Christmas Cake'
1lb Mixed Fruit
4oz Raisins
4oz Glace Cherries (cut into quaters)
1/2 Pint of Sherry (can be brandy if you like, but Sherry will be sweeter)
6oz Soft Margarine
6oz Moist Brown Sugar (dark gives a richer colour)
Grated rind of 1 Orange and 1 Lemon
3 eggs
1tbsp Black Treacle
2oz Chopped/ flaked almonds
6oz Plain flour
3oz Self-raising flour
1tsp Mixed spice
Soak all the fruit in sherry for three days (stirred daily).
Mix the marg, sugar citrus rinds, eggs, treacle (with an electric mixer/ whisk) stir in almonds
Add sifted flours, spice and soaked fruit (incl any left over sherry)
Pour into an 8 inch cake tin (which has been greased and lined) and make a small well in the centre
Cook in a cool oven (140 degrees C) for 3 1/4 hours
Sit back and enjoy a perfectly moist cake ... or, if you can wait, decorate it with marzipan and icing first!

pumpking rolls
i found it on a website somewhere
1/4 cup powdered sugar (to sprinkle on towel)
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 large eggs
1 cup granulated sugar
2/3 cup Pure Pumpkin ( i use the canned kind )
1 cup walnuts, chopped (optional)
1 (8 ounce) package cream cheese, softened
1 cup powdered sugar, sifted
6 tablespoons butter or margarine, softened
1 teaspoon vanilla extract
1/4 cup powdered sugar (optional)
PREHEAT oven to 375 degrees F. Grease 15 x 10-inch jelly-roll pan; line with wax paper. Grease and flour paper. Sprinkle towel with powdered sugar.
COMBINE flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Beat eggs and sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts.
BAKE for 13 to 15 minutes or until top of cake springs back when touched. Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.
BEAT cream cheese, powdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake; remove towel. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired.
i didnt have a towel, so i used an old pillow case
