Okay, here it is with instructions for my DAK machine.

1 package yeast
2 ¼ cups bread flour
¾ cup wheat flour
½ teaspoon salt
4 tablespoons white sugar
½ teaspoon cinnamon
Pinch of nutmeg
2/3 cup warm applesauce
1 tablespoon butter
½ cup warm apple juice
½ cup grated fresh apple (Use ingredients at room temperature.)

Directions

Put all ingredients in the order listed into the pan, select white bread, and push “Start”.

Denise's Famous New York Cheesecake:
Recipe for one 10 inch springform pan or two 5 inch spring form pans. Line bottom of both pans with parchment paper.

Crust is really preference and this is mine:
1C Graham cracker crumbs
1/3 C pecan crumbs (process them so they are consistency of the graham cracker crumbs)
2-3TBsp Sugar
6TBsp melted butter
2-3TBsp dutch processed cocoa

Mix all ingredients for crust and press into pan(s).
Bake 400 degrees for 10 minutes and cool completely.

Cake(s):
5 x 8oz cream cheese (no non-fat crap! use real cream cheese ^.^)
1C Sugar
1C Sour cream
2TBsp flour
1TBsp Madagascar vanilla extract (pure)
1/2TBsp lemon juice freshly squeezed
1tsp orange juice freshly squeezed
5 eggs

All ingredients must sit at room temperature for 24 hours.
Combine the first 4 ingredients and mix on high 4 minutes.
Then add each flavoring and mix on high 2 minutes more.
Set mixer speed to low. Add each egg separately and do not over mix! Remember cheesecake is a custard and you will mess it up if you whip it on high after your eggs are added.
Pour into cheesecake pan(s) with cooked crust(s).

CONVECTION BAKE:
One 10 inch cake at 325 degrees for 45 minutes then at 275 degrees for 15 minutes. Turn off oven and open door for 10 minutes. Remove cake and run knife around edge to separate. Cool 2 hrs on the counter. Refridge 24 hours and serve.
Two 5 inch cakes at 325 degrees for 35 minutes and the rest is the same
Another cheesecake tip! The bigger the cake, the more likely it will crack. This is due to uneven heating and cooling while the custard sets. If you are going with the larger cake you may need to adjust your cooking with your oven's performance etc....or just do 2 x 5inch cakes
I ordered the pans online as they are non-standard size and not usually found in stores. However, 5 inches is a perfect size dessert with dinner for 4.

My family likes caramel sauce on this cake which is a dozen caramels with 2TBsp heavy cream melted together in the microwave!

This is by far, the best cheesecake in the whole world!
Die hard NYCheesecake fans love the authentic flavor and can rarely pick out the flavor of the orange which compliments the sour perfectly
...they just get wide eyed and ask for seconds

PS...if you decide to make it, I would love your feedback regarding how you liked it!

The time for a non-convection oven should be the same BUT the temperature should be 25 degrees F HIGHER.

...and cheesecake is healthy!
If you look, it's mostly cheese and eggs which in moderation are quite fine.
Sugar and carb content is fairly low when compared to BREAD :P
