Default Low Carb New York Ricotta Cheesecake
I know, doesn't sound all that fantastic...but it is!
It's low carb, low sugar and if you use low fat sour cream and ricotta, it's another way to cut some calories:

I make this quite often and even the biggest cheesecake fanatics flip out for it.

For a little bit of a crust, spray the pan with Pam (or any spray vegetable or canola oil) and sprinkle in some finely ground pecans.

Believe me...yummy!

Some fresh fruit on top is great too
